Super Grouper with Sautéed Zucchini & Tomatoes  Serves 4

Ingredients for Fish

  • 1.5lbs+ fresh grouper
  • 1/2 cup butter
  • 2 tbsp lemon juice
  • 1/4 tsp each paprika & garlic salt
  • 1/2 tsp dried parsley
  • 1/4 tsp pepper
  • 2 tbsp EVOO mayo (regular if that is what you have!)
  • Salt & Cayenne - amount as desired

Directions

Melt the butter and mix with lemon juice; baste the fish with 1/2 mix on both sides (as well as spreading some on tinfoil). Mix the dry ingredients together and sprinkle on both sides of the fish. Baste the mayo on the fish, and then add remaining butter.  Lastly, sprinkle with some cayenne and salt if you would like a little more punch of flavor!

Sautéed Zucchini & Tomatoes

  • 1 large zucchini, cut into 1/4 half moon pieces (or your size choice!)
  • 1 can diced tomatoes (I use the one with basil, oregano & garlic, but if you don't...add these spices!)
  • 2 tbsp EVOO
  • Grated parmesan cheese if desired

Directions

In a large sauté pan on medium-high heat, add EVOO. When hot, add zucchini and cook for about 2-3 minutes. Once the veggie begins to soften, add in the can of tomatoes - note I drained some of the water out of the can first! Cook for a few more minutes; sprinkle some parmesan on top and voila!
